This year the 4th of July is in the middle of the week and if you’re like me you have almost no time to prepare in between the busyness of work and life! But, if you’ve gotten invited to a 4th of July party and want to bring something that looks fancier than it is I have a solution for you! These Blackberry Mini Tarts are the perfect last minute dessert option that require minimal set up and no baking time. All you need is about fifteen minutes! Blackberry Mini Tart Ingredients
- 1 pint of blackberries
- Pre-made mini tart shells – I used some from my local Marianos, but these are also a good option and similar to what I used.
- Jar of lemon curd – you can usually find this near the jam section of your local grocery store
- 8 oz. container of mascarpone cheese
Directions
- Pre-wash your blackberries and lay out your desired amount of tart shells.
- In a medium sized bowl mix equal parts lemon curd with the mascarpone cheese. I really just eyeballed it and then mixed in the lemon curd to taste.
- Take a small spoon and place a dollop of your filling in the tart shells.
- Place your blackberries on top and that’s it!
- You can garnish with some mint and transfer your tart shells onto a nice serving dish or platter.
These blackberry mini tarts keep refrigerated for a few days so you can make them in advance of an event or serve them on the day of. These tarts taste like lemon flavored cheesecake bites and the blackberries add a juicy freshness. If you bring these to an event I promise everyone will think that you put in way more effort than you really did, so bask in all the compliments that you get !
