Its been a fun and busy summer for Ted and me! This weekend we went camping in Wisconsin with a good group of friends and spent some time outdoors. We didn’t get much sleep and I’m currently covered in bug bites but we had lots of a laughs with the company we were with! On our way back home we stopped at the grocery store and didn’t get a chance to do any refrigerator inventory. We ended up buying way too many blueberries and lemons for ourselves, but this was a happy accident since it gave me an excuse to make one of my favorite recipes: a lemon blueberry tart. Ingredients
- 1 1/2 cups graham cracker crumbs
- 6 tablespoons butter, melted
- 1/4 cup granulated sugar
- Zest of one lemon
- 2 large egg yolks
- 1 (14 ounce can) sweetened condensed milk
- 1/2 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1 cup fresh blueberries
The final product is a delicious lemon blueberry tart, perfect for summer. Enjoy!
