Late Summer Nectarine Tart

Summer is dwindling down and now is the time to enjoy the last fruits of summer. Peaches, plums, nectarines, cherries – these are of course available all year round but in late summer these fruits are at their most delicious and cheapest! So this Labor Day after Ted and I got back from our weekend camping in Door County, I picked up a bunch of fruit to make a quick and simple tart.

Nectarines are my favorite and I’ve never had them in a dessert before so I wanted to try them out in a tart. For the tart shell I used pre-made pie crusts for quick and simple dough. For the vanilla tart filling I used directions from A Pretty Life‘s tart recipe. I knew I just wanted a simple nectarine topping so cut up my fruit and mixed in some cinnamon and honey to sweeten the fruit.

Nectarine Tart Ingredients
Crust & Filling
  • 1 package of pre-made pie crust
  • 1/3 cup sugar
  • 2 tbsp cornstarch
  • 4 egg yolks
  • 1 1/3 cup whole milk
  • 1 tsp of vanilla
Topping
  • 4 ripe nectarines
  • honey
  • cinnamon
Nectarine Tart Directions

1. Preheat your oven to 425 degrees. Take your pre-made dough and roll the sheet into a ball with your hands to warm up the dough from the fridge.

2. Lightly dust your counter or baking surface with flour and roll out the dough to match the size of your tart shell. Mine measures 9 inches in diameter so I aim for that size, and make sure the dough is not too thin or thick.

2. Lift your dough into the tart shell and press it into the shell’s sides. Line your shell with aluminum foil and place baking weights (or beans!) into your tart shell to prevent it from rising and bake in the oven for 8 minutes.

3. After 8 minutes remove the shell and weights and bake in the oven for another 4 to 5 minutes until the shell is golden brown. Once complete take out your tart shell and let it cool.

4. For the tart filling, follow the directions for the vanilla cream on A Pretty Life’s blog.

5. While your tart shell and vanilla cream are cooling chop the nectarines into thin slices. Place them all into a bowl and then drizzle honey and cinnamon on top.

6. Once everything is cooled and ready you pour the tart filling into your shell and artfully arrange your nectarines on top. Place into the fridge and chill before serving.

7. Enjoy!

This was a delicious summery treat – it’s been a while since I baked so making this brought a smile to my face. If you try the recipe let me know how it goes – you can use any fruit filling so I like this recipe since it can be adjusted for any type of fruit.
